Somehow my gallery compatibility with my wordpress took a dump and now it’s not working! Before, you could click on the “latest image” and it would take you to that image in my gallery. Or you could click on the gallery tab at top and it would take you there but now things are all screwy! See, I go to write on this blog again and now I have to play fix it! Plus, it seems I need to upgrade my wordpress version too. I really wish I had a technogeek husband fixing this instead of me but he doesn’t meddle with this sillyness, too busy engineering other bigger greater things I guess? hehe

Tortilla Casserole
1 lb ground beef
1 medium onion chopped
1 jar green or red salsa
½ cup sour cream
1 can condensed cream of chicken soup
6 corn tortillas (6-8 inches) cut into strips 1inch
2 cups shredded cheddar cheese
Heat oven to 350
Cook beef and onion in 10inch skillet over medium heat 8-10 minutes, until beef is brown & drain.
Spread ½ cup salsa in bottom of ungreased square baking dish, 8×8x2. Mix remaining salsa, sour cream & soup. Layer half of the tortilla strips, beef mixture, soup mixture and cheese; repeat.
Bake uncovered 30-40 minutes or until hot & bubbly. Let stand 10 minutes. Garnish with olives if desired.

The Potato Casserole (side dish)
*this was made for me growing up by my step-mom and her family. I LOVED this recipe and had to have it for hosting my first Thanksgiving years ago. I make this all the time and I’ve lost count how many times I’ve given it to people to. So Simple!
2 lbs shredded hashbrowns (we use I think Simply Shreds the non-frozen kind for better results)
2 cups sharp cheddar
1 pt. sour cream
1 can cream of chicken & herbs
1 can cream of chicken & mushroom
2/3 cup onion
Salt & pepper
Bake at 350 degrees 40-60 minutes (until bubbly)
Mix 2 cups cornflakes with ½ cup butter and add that on the top for the last 10-15 minutes
*this is the “original” recipe. I add onions, green onions and sometimes we use the hashbrowns w/ peppers in them instead of plain. I also add about a ½ block of Cream Cheese too

There a million times in the day that I want to just sit and write or type things that are going on but then I get distracted by something else. There are more times than I can count that I look at other mom’s blogs and think to myself “how do they have time to do that?” Then I tell myself “well silly, if you weren’t window shopping online for the last 15 minutes or reading that mom’s blog for the last 10 minutes, you could have written something yourself”. So I¹m trying to figure out time(s) in my day to write, as mindless and boring as it probably will be!
I have some friends who think I’m completely geeky and honestly seem to be laughing at me behind my back or even worse looking at me like I have “no life” because I have interest in the whole computer blog / social networking side of things. The real story is, I’ve had my own website for a long time, we are talking about the simple geocities and tripod free account ones from way back and I remember using AOL to get online through dial-up. (Oh the fun of getting ticked offline because someone would call or my brother would pick up the phone to disconnect me!) It all started as a way to share things with friends & family that were far away easily. It was nice to just say, “hey check out my website, it’s updated with new pictures.”
I also used to write lots of poetry, if that’s what we call the ramblings I did while a teenager hating the world or crying over a boyfriend. I like the reconnecting with old friends aspect that is now possible with all these “social” sites. In today’s society having families live close to one another, as we get older, seems rare. So, the web has really bridged that distance gap. It also has given me the opportunity to meet some really amazing people both online & in person.
If by having a blog / website to share with friends/family and enjoying the connections I’ve made through “social” sites makes me a geek then I’ll take your label gladly.
